According to a recent ChowHound deep dive, Illinois' best breakfast sandwich isn’t from a drive-thru or a national chain. It’s tucked inside a cozy Chicago café called Allez Café, and it’s anything but basic.

Picture this: a perfectly square, fluffy egg patty stacked on a crispy hash brown cake. Then comes thick-cut bacon, smoked Gouda, jalapeño jam, and a swipe of onion aioli. All of that is tucked into a soft potato roll like it was designed by a breakfast architect.

After watching an Instagram video of this sandwich being built… yes, I’m embedding it… I immediately added Allez Café to my Chicago food bucket list. I haven’t had it yet, but I already know it’s going to ruin all other breakfast sandwiches for me.
